Method:

  1. Preheat your oven at 350 degrees Fahrenheit. Mix the cookie crumbs with melted butter. Pour this over a pie plate and bake it for at least 15 minutes. You know it’s done when the crust turns light brown along the edges and the top. Set it aside.
  2. Then increase the oven temperature. 400 degrees Fahrenheit should be good enough. Slice the cantaloupe in two pieces and eliminate the seeds. You need to remove the pulp and place it in a saucepan.
  3. Heat the cantaloupe pulp on medium heat to get the juice out. Then transfer this to the blender to process it until the mixture becomes smooth. The required amount of cantaloupe is 2 cups. Pour all of this back into the pan.

  7. Then you use the tartar cream and egg whites. Beat them together until the blend becomes frothy. Put in the six tablespoons of sugar. Continue beating.
  8. The final step before baking is to spread the meringue over the filling. You can smoothen it out using a spatula.

1. Feel a craving. Play a game.

Forget Energy Drinks.  Leave the Fad Diets in the dust.  The greatest wonder to our body is just a spigot away!  Water is your body’s natural fuel. Most of us start our mornings with a fresh, hot cup of coffee or tea to warm our bodies after getting out of bed. When we drink water, we tend to prefer it cold, but according to Ayurvedic medicine, we have it all wrong. Regularly drinking very warm water, especially in the morning, can heal our bodies, providing digestive power and reducing metabolic waste that could have built up in our immune system.

While drinking warm water may not suit your taste buds, it may be beneficial to put the caffeine and tea aside for your health’s sake. Our Editor, Connie Alsobrook, gives us the following reasons why:

1. Cleanses Digestion
A very warm cup of water in the morning can help cleanse your body by flushing out toxins. Water and other liquids help break down the food in your stomach and keep the digestive system on track. Everyone knows what tea is, right? Tea, technically, comes from the leaves of one plant, camellia sinensis. Anything other than the leaves from this plant is not actually tea, although tea is often used as a catchall word to include all the different herbal beverages used these days.

Legend has it that tea was discovered long ago in China quite by accident. Some leaves from a nearby plant blew into a cup of hot water; a nice brown colored beverage resulted, was found to have a refreshing taste, and tea was born. However it was discovered, tea is very refreshing, whether it is black, green, oolong or white. Tea has been proven in more recent times to have wonderful health benefits. We have all heard of antioxidants in tea, helping to fight free radicals that can cause harm to the body. Tea is far lower in caffeine than coffee. It is refreshing, whether used hot or cold.

There are various types of tea, all beginning with the same leaves. Black tea is created by bruising or crushing the green leaves to expose them to oxidation and allowing them to ferment, then rolling the leaves and drying. This produces a beautifully colored beverage and has the strongest flavor of all the varieties of tea. Oolong tea (pronounced OH-long) is oxidized and fermented the same as black tea, but only for about half the amount of time and the resulting product is a lighter, more reddish beverage with a flavor all its own, somewhere in strength between black tea and green tea. For green tea, the leaves are heated immediately, stopping the fermentation process entirely, then dried and rolled. It produces a lovely light colored beverage, and is said to have the most health benefits. The processing of white tea is similar to that of green tea, but only the unopened buds of the leaves are used. It has the same health properties as green tea, but the flavor is the lightest and most delicate.

Good quality tea is a wonderful beverage. Whole rolled or twisted leaves are the best quality; the smaller the leaf, the higher the quality of the tea. The top grades are called Flowery, Golden Flowery or Tippy. Seconds, termed Choppy, are the leaves that have broken into smaller pieces. They brew a great tea, and are usually less expensive. The smallest particles leftover from the tea process, called Fannings, are what is used in tea bags. It brews tea of course, but once tasting a tea brewed from a wonderful full leaf Darjeeling Black Tea, for example, it is hard to return to a tea bag for optimal flavor.

Orange Pekoe (rhymes with gecko) is a western terminology applied to a grade of black tea; the word orange in the name has nothing to do with flavor, but could be a reference to the Dutch House of Orange using the name Orange as an implied sea” of some sort. Pekoe may be a westernized interpretation for a Chinese word meaning white hairs, referring to the fine white down on the tea leaves.

So, what are herbal beverages called? Herbal beverages are called tisanes, and may be prepared by different methods, usually infusion or decoction. It is incorrect to apply the term tea to anything infused or decocted, although tea is actually infused. Infusion is the preparation method of choice for leaves, flowers or buds; plant matter that will release its properties easily into a drinkable beverage. Placed into heated or boiled water and allowed to steep, the herbs release their goodness into the water, and then are strained out. Decoction is the method used for harder or denser plant materials, such as roots or barks that take longer to release their flavors or health benefits. With a decoction, the plant materials are brought to a boil, simmered gently for 15 minutes or more allowing the liquid to reduce, and then straining.

No matter which you prefer, tea or tisane, for pure enjoyment or for health benefits, look for the best quality. Discover your favorites among the different types of loose teas. Taste the different herbal tisanes and discover new flavors. Above all, enjoy.

Simple and Healthy Recipe – The Allergen Free Cake (well except for the nuts)

Have you noticed an alarming increase in the number of people you know who suffer from food allergies or intolerances?

If you think back ten years ago, catering for someone with special dietary requirements was pretty rare. Sure there were vegetarians and people who had religious dietary requirements and of course people who just didn’t like some things (like me and bananas). Apart from that, in my world it was rare to come across people allergic to food.

These days, it seems, food allergies and intolerances are almost becoming the norm. According to Wikipedia, 3-4% of the US population are effected by food allergies and anywhere from 2-20% are impacted by food intolerances. There are signs of this trend emerging – given that innocent peanut butter sandwiches are being banned from school lunchboxes .

In my day job, it’s pretty hard to avoid the impact of increasing awareness of food allergens has on the business. One of our factories is classified as ‘nut free’. Sales of our rice cookies – made without wheat – are on the rise. Intensive cleaning procedures are in place at the end of each production run for biscuits containing known ‘allergens’.

But the thing that has really brought it home to me is my dear old Dad.

When I was little, I fondly remember being able to rely on Dad to ‘get rid of’ anything we didn’t want to eat. When there were icky black jelly beans around, or you chose unwisely from the chocolate box – Dad was always there to polish off the offending item.

But a few years ago, when he was in the midst of depression and being treated for a number of problems, one doctor sent Dad for an allergy test. The results came back with a positive reaction to four little ingredients – wheat, dairy, eggs and peas.

At the time I remember thinking it was going to be tough. Savoury food has been surprisingly OK. Think fish or meat and salads or veg. We’ve even found some gluten free pasta that isn’t too bad. Sweet treats and dessert, on the other hand have been incredibly tough.

Sometimes, when I’ve been cooking for a crowd at the farm I serve a separate dessert for Dad. I usually feel a little guilty. No one ever gets as excited about Dad’s ‘special’ dessert as they do about the decadent treat the rest of us are enjoying.

This weekend, I’m happy to say, I tackled the challenge of a Dad compliant dessert. Something wheat-free, egg-free and dairy-free that would also taste delicious. Lets just thank heavens dark chocolate doesn’t contain dairy. Oh and that my sister discovered a lactose free yoghurt.

Apart from being suitable for my Dad, the biggest bonus of this recipe is how good it tastes. Decadently moist and rich, it is a serious dessert cake – fit for the fanciest of dinner parties. Although it would be very remiss of me if I forgot to mention how easy it is to make. With only 6 ingredients and a two step food processor mixing method – it’s only fractionally more challenging than mixing up a cake out of a packet.
